India – Coconut Coriander Chicken Wings

Coconut coriander chicken is a flavorful and aromatic dish that combines tender pieces of chicken with a rich coconut and cilantro/coriander finish. The chicken is marinated with a blend of spices and then cooked in a creamy coconut sauce. The dish is known for its delightful balance of creamy and spicy elements, creating a delicious and satisfying meal that is popular in many Southeast Asian cuisines.

  • 3 lb chicken wings
  • 12 oz can of coconut cream
  • 1-4 t of red chili powder or flakes, to taste (paprika, cayenne, Turkish pepper, etc)
  • 8 oz tomato sauce
  • 1 t cumin
  • 1 t oregano
  • 2 ½ t turmeric
  • ¼ t nutmeg
  • ½ cup fresh cilantro/coriander, chopped
  • juice of 1 lime

Combine all ingredients except coriander and lime juice. Add the chicken wings and marinate for 1 hr.

Then bake for 1 hr in 375 deg oven, turning and basting every 15′.

Remove from oven, sprinkle with coriander and lime juice.
