Coconut coriander chicken is a flavorful and aromatic dish that combines tender pieces of chicken with a rich coconut and cilantro/coriander finish. The chicken is marinated with a blend of spices and then cooked in a creamy coconut sauce. - 3 lb chicken wings
- 12 oz can of coconut cream
- 1-4 t of red chili powder or flakes, to taste (paprika, cayenne, Turkish pepper, etc)
- 8 oz tomato sauce
- 1 t cumin
- 1 t oregano
- 2 ½ t turmeric
- ¼ t nutmeg
- ½ cup fresh cilantro/coriander, chopped
- juice of 1 lime
Combine all ingredients except coriander and lime juice. Add the chicken wings and marinate for 1 hr.
Then bake for 1 hr in 375 deg oven, turning and basting every 15′.
Remove from oven, sprinkle with coriander and lime juice.
